Going into no-low carb I knew that I would have to make myself try different things, because all the things I know I like, make me fat and don't exactly have no or low carbs.. I was ok with this.
This week, I started out with low carb lasagna.
(I found the recipe here: ( http://theroadfromfattofit.blogspot.com/2011/12/holleys-just-like-real-thing-lasagna.html ). I tweaked it a little because I like more cheese, and ricotta. Brad went back for seconds and Kaleb said "I like this better than the other lasagna you make"! Personally I think there was too much Italian seasoning in it but I still liked it enough I will defiantly make it again.
Monday I made Chicken Enchilada's that we love ( http://allrecipes.com/recipe/whits-chicken-enchiladas/ ). When I was cooking Brad asked what I was making and when I told him, he looked confused (because of the tortillas). I told him they would be normal with tortillas.. He said "your the best honey". I put my filling in a pablano pepper instead of a tortilla. It worked out ok, I didn't like the crunch of the pepper so I just ate the filling and it was still really good and still low carb.
Tuesday night was my "Creative-Try-Something-New" night. I attempted a Parmesan-Almond meal crusted chicken and the cauliflower "mashed potato". FAIL! I have heard from a couple of my friends that you can make cauliflower kinda like mashed potatoes. I have also seen them on a lot of the food blogs and sites that I've looked at for recipes. Here's the one I followed: ( http://theroadfromfattofit.blogspot.com/search/label/Cauliflower ). I'm not saying in anyway that this recipe sucks.I just messed it up. I did the first step, put the cauliflower in the pot with just a cup of chicken broth and garlic. While that's heating up I crusted the chicken and put it in the oven. I was getting all of the other ingredients ready for the cauliflower (and getting Brayden a snack and or juice) and realized that all of the broth was gone-burned in the bottom of my nice Paula Dean pot. The stem was the only thing that burned so I attempted to get the cauliflower apart to "mash" it.... this was a pain in the ass, it was steaming hot, the stem wasn't budging so I cut half the bottom off.. mashed it up the best I could. I think there were just too may stems in it... it was just kinda gross. None of us ate it. Brad liked the chicken, Kaleb and I didn't... So I think it's safe to say I won't be attempting this again. LOL
After the disaster that was Tuesday night, the rest of the week will be a very safe. Something we ate a lot before no carb, grilled chicken salad, followed by the pizza that we all liked and then I'm going to bbq some ribs.
