15 Pounds!

I went in for my B-12 shot and weigh in on Friday and I lost another 3 lbs! So my total lost is 15 in 3 weeks!! I was surprised though, was thinking to myself that 15lbs is a lot and I'm surprised I haven't seen more of a difference in my clothes.. If someone that weighs 145 and lost 15lbs it would be very noticeable and be a big change..I understand though, when you have so much to loose it takes more to notice.

All of the above was going through my head Friday after my appt..Saturday was our trip to Sea World with my mother in-law. I put on a pair of my capri pants that I had previously struggled to get over the bottom part of my belly, zipped up with ease!! I gave myself a free day because I pretty much had too. I didn't go over board though. We went to whataburger for breakfast and I got a coke because they didn't have water.. it was TOO SWEET I couldn't drink it! I had some lemonade and water the rest of the day.. I did have some real pizza, it was good. We walked sooo much my legs hurt. We all had soo much fun.

This week I'm not doing anything too crazy, I did find a recipe for a kind of chicken parm casserole thing http://foodwishes.blogspot.com/2012/03/chicken-parmesan-casserole-2012-new-hd.html  and maybe some chicken enchiladas (I found high fiber, 5 net carbs per tortilla)

Weigh-In

I went today for my B-12 shot, these are awesome btw and if you don't take any B-12 you should! It really makes me feel good :).... Something else that made me feel good was that I lost another 5 lbs! So I'm down 12 total in 2 weeks! We had a break at work today so went to Serrano's and I allowed myself to have like 10 tortilla chips...but other than that I still followed my rules :)

Cauliflower-gross!

Going into no-low carb I knew that I would have to make myself try different things, because all the things I know I like, make me fat and don't exactly have no or low carbs.. I was ok with this.

This week, I started out with low carb lasagna.
(I found the recipe here: ( http://theroadfromfattofit.blogspot.com/2011/12/holleys-just-like-real-thing-lasagna.html ). I tweaked it a little because I like more cheese, and ricotta. Brad went back for seconds and Kaleb said "I like this better than the other lasagna you make"! Personally I think there was too much Italian seasoning in it but I still liked it enough I will defiantly make it again.

Monday I made Chicken Enchilada's that we love ( http://allrecipes.com/recipe/whits-chicken-enchiladas/ ).  When I was cooking Brad asked what I was making and when I told him, he looked confused (because of the tortillas). I told him they would be normal with tortillas.. He said "your the best honey". I put my filling in a pablano pepper instead of a tortilla. It worked out ok, I didn't like the crunch of the pepper so I just ate the filling and it was still really good and still low carb.

Tuesday night was my "Creative-Try-Something-New" night. I attempted a Parmesan-Almond meal crusted chicken and the cauliflower "mashed potato". FAIL! I have heard from a couple of my friends that you can make cauliflower kinda like mashed potatoes. I have also seen them on a lot of the food blogs and sites that I've looked at for recipes. Here's the one I followed: ( http://theroadfromfattofit.blogspot.com/search/label/Cauliflower ). I'm not saying in anyway that this recipe sucks.I just messed it up. I did the first step, put the cauliflower in the pot with just a cup of chicken broth and garlic. While that's heating up I crusted the chicken and put it in the oven. I was getting all of the other ingredients ready for the cauliflower (and getting Brayden a snack and or juice) and realized that all of the broth was gone-burned in the bottom of my nice Paula Dean pot. The stem was the only thing that burned so I attempted to get the cauliflower apart to "mash" it.... this was a pain in the ass, it was steaming hot, the stem wasn't budging so I cut half the bottom off.. mashed it up the best I could. I think there were just too may stems in it... it was just kinda gross. None of us ate it. Brad liked the chicken, Kaleb and I didn't... So I think it's safe to say I won't be attempting this again. LOL

After the disaster that was Tuesday night, the rest of the week will be a very safe. Something we ate a lot before no carb, grilled chicken salad, followed by the pizza that we all liked and then I'm going to bbq some ribs.

What brought me here...

I find myself about 100lbs heavier than when I met Brad (6 years ago)... I guess it's true what they say "you get comfortable, and you get happy fat" only he didn't because he is way more active than I am and he has an important thing called good metabolism. We like junk food and soda, we get pizza at least once a week, spaghetti, lasagna and hardly any veggies...all the time.


A couple of weeks ago Kaleb was talking in baby talk to Brayden "look at those chubby cheaks". Then he asked Brad if he was chubby like Brayden when he was a baby. Brad said "no you have always been skinny minny like me". Kaleb then asked if Brayden would be the same way..Man I hope so! Kaleb has been asking about counting calories and wondering what makes a person "bigger". (he doesn't say fat because I had told him before about words hurting people's feelings. So he is carefull with his words..) So, I've reached the point that we need to change what and how we eat. I told Brad that he would be included in this because I cant make two different dinners every night and I don't have the control to not eat what I make for him that's different.


On April 27th, I went to Texas Weight Loss Center to get a plan and make the change. I'm not calling this a diet because diets come and go, and dont work.... this is a lifestyle change for all of us. It's very low carb, low sugar, high protien plan.


This last week I focused on looking up recipies that wouldn't be too off the wall and easilly adaptable for Brad and Kaleb. You should have seen the look on Brad's face when I told him I was making a quiech! Then I explained to him what it was.. I found a few really great low carb blogs and websites. They were very happy with the low carb pizza that I made this week...Brad did suggest a slight change in the sause but still said he liked it. Kaleb and his friend ate it and liked it alot!


I went back to the doctor today and I'm down 7 lbs!
